Minty Peanut Butter Smoothie Bowl

As the cold winter days begin to transition into sunny ones, my food cravings have shifted from stovetop oatmeal back to one of my staple breakfasts: the smoothie bowl. I have been making smoothies so often lately that it has gotten to the point where I have three or more in a day because they are just too tasty. The other day before the gym I was low on energy, so I whipped up a quick smoothie by throwing random ingredients into my food processor. Little did I know that the smoothie I would create would change my taste buds forever! Since its discovery, I have made it every day and love it a bit more each time. The unexpected key ingredient that enhances the flavor of this smoothie is fresh mint! I would have never guessed that peanut butter and mint would pair so nicely together, but now I cannot stop making this creation. 

The measurements of this recipe are listed in grams, but you can easily convert them into cups if you do not have a food scale! This smoothie is incredibly fresh tasting and full of flavor and plant-based protein! Not to mention, it can be made within minutes. The recipe is outstanding as is, but you can add boosters to it such as cinnamon or coffee, and not to mention, all of your favorite smoothie bowl toppings!

INGREDIENTS (Yields one smoothie bowl)

  • 80 Grams of a ripe, frozen banana
  • 80 Grams frozen dark, sweet cherries
  • 45 Grams frozen blueberries
  • 1/2 Tsp. vanilla extract
  • 1/2 Cup unsweetened non-dairy milk or water
  • 1 Tbsp. creamy, unsweetened peanut butter
  • 1 Scoop vegan chocolate or vanilla protein powder, I use Sunwarrior
  • 3-4 Fresh mint leaves

Optional: 1-2 Tbsp. powdered peanut butter, 1/2 Tsp. Cinnamon

INSTRUCTIONS:

  1. Blend all the ingredients together in a food processor or blender until smooth and fluffy.
  2. Enjoy immediately by itself or with your favorite toppings!
