Three-Ingredient Mini Sweet Potato Pizza Crust

Pizza is hands down one of the best creations out there. Although it is amazing to order in a giant pie, it can also be fun to get creative in the kitchen and whip one up yourself! However, there are times when making a traditional pizza crust with yeast can feel too time-consuming. Additionally, it can be hard to find a healthier and tasty alternative to the typical pizza crust.

This three-ingredient sweet potato crust is not only gluten-free, oil-free, and yeast-free but it is also nicely seasoned and can hold all of your favorite toppings. This crust is also lovely because of its size: you can eat the entire thing guilt free! I am a big fan of adding tomato sauce, veggies, and chipotle-styled seitan on my pizza, or, oil-free pea pesto with barbecued seitan shreds and roasted bell peppers. By making your own pizza crust at home, you can really expand your creativity with toppings; the possibilities are endless!

INGREDIENTS (Yields one mini pizza crust)

  • 1/2 Cup canned unsweetened sweet potato purée 
  • 1/4 Cup garbanzo bean flour, I use Bob's Red Mill
  • 1 1/2 Tbsp. Cornstarch

Optional: 1 Tsp. oregano and garlic powder, a pinch of salt

INSTRUCTIONS

  1. Heat an oven or convection oven to 400°F.
  2. Mix all of the ingredients together in a bowl. The consistency of the mixture should resemble a thick brownie batter.
  3. In a heated nonstick pan, add in the entire mixture. Using a knife or the flat-edged side of a spoon, shape the mixture into the form of a crust. You can make the crust as thin or as thick as you would like. Keep in mind that the cooking time will vary depending on the thickness. I like to make my crust about 1/4 an inch thick.
  4. At first, it will appear that the crust is sticking to the pan, but it will loosen as it cooks. Just be patient! Once it begins to loosen, you will be able to slip a spatula underneath and flip it. Cook each side for about 4-5 minutes. 
  5. Once the crust has been cooked on both sides and has begun to hold its shape, transfer to a pan lined with parchment paper.
  6. Cook the pizza crust in the oven, without toppings, for about 20 minutes. Flip it at the ten-minute mark to ensure even cooking on both sides.
  7. Remove the pizza crust from the oven and add your toppings of choice. If using tofu, seitan, or tempeh, I recommend cooking them beforehand almost all of the way through and then adding them to the pizza.
  8. Cook the topping-enhanced pizza for another 5-10 minutes. 
  9. Remove from the oven and let cool for 5 minutes. Slice and enjoy!
