Coco-Kale Smoothie Bowl

With such intense heat and long sunny days, it is clear that summer is in full swing. While we have all longed for such wonderful weather, it is almost impossible to walk more than a few blocks without craving a cold and refreshing drink to help cut the heat. The other day, in the midst of the heat wave, my dad and I drove by our local health food store to pick up some groceries. After shopping, we went straight to the back of the store where the juice and smoothie bar was located. Although I am one to typically crave peanut butter-chocolate smoothies, I went outside of my comfort zone and picked a vibrant green-colored smoothie instead. To my surprise, the flavor was so outstanding that for the following days I could not stop thinking about its deliciousness. As soon as I arrived home, I went straight to the drawing board and recreated this smoothie with a twist!

This smoothie is refreshing and flavorful, vibrantly green, and nutrient dense! The combination of mango, mint, and coconut is not only mouthwatering, but it offers an invigorating feeling too! Of course, all it takes is a blender and it can be whipped up within minutes. Your eyes will thank you for such a pretty colored smoothie, and your body will appreciate all of the health benefits packed within.

INGREDIENTS (Yields one smoothie bowl)

  • 1/2 Frozen, medium-sized banana 
  • 1/2 Cup frozen mango
  • 1 Tbsp. desiccated coconut
  • 1/2 Cup coconut water
  • 1/2 Scoop vanilla protein powder, I use Sunwarrior
  • 4-5 Fresh mint leaves
  • Handful of baby kale

Optional: 1/2 Tbsp. cacao nibs, 1/2 Tbsp. hemp seeds

INSTRUCTIONS:

  1. Blend all the ingredients together in a food processor or blender until the kale and mint have completely broken down, and the texture is smooth and fluffy.
  2. Enjoy immediately by itself or with your favorite toppings!
