Oil-Free Sweet Potato Matchsticks with Nut Butter Sauce
Sweet potatoes are absolutely outstanding. Not only can they be used in sweet or savory recipes, but the root vegetable also contains an abundance of health benefits, as they are high in vitamins, low in sugar, and are fat-free! This recipe is one of my all time favorites. It is perfect for breakfast, snack, or even as a dessert!
These sweet potato matchsticks are oil and refined sugar-free, healthy, and incredibly delicious! I make this recipe multiple times a week because it is truly addicting.
INGREDIENTS (Yields one serving)
For the potatoes:
- One medium sweet potato
- 1/2 Tsp. cinnamon
- 1/4 Tsp. nutmeg
For the sauce:
- 1 Tbsp. unsweetened peanut butter
- 1 Tbsp. unsweetened almond butter
- 2 Tbsp. non-dairy milk
- 2 Tsp. coconut sugar
- 1/4 Tsp. vanilla extract
- 1/2 Tsp. cinnamon
Optional: 1/2-1 Tsp. Vegan vanilla protein powder
INSTRUCTIONS:
- Preheat the oven or convection oven to 425*F.
- On a cutting board, cut the washed sweet potato into matchsticks, leaving the skin on.
- Coat the matchsticks with the cinnamon and nutmeg, and bake in the oven for about 30-35 minutes, until the potatoes are fragrant and soft.
- Meanwhile, create the sauce by mixing all of the remaining ingredients in a small container. This recipe will provide an abundance of sauce for the matchsticks, so do not be worried!
- Once the sweet potatoes are finished baking, enjoy immediately by pouring the complimentary sauce directly over the matchsticks, or keeping it in a container and dipping in the potatoes.
