Four Ingredient Protein Pancakes with Chocolate Peanut-Butter Sauce
I believe that pancakes are better than waffles, french toast, and all other breakfast dishes out there. Who doesn't love freshly made fluffy pancakes stacked upon each other, with vegan butter and maple syrup dripping down the sides? I for sure do! Particularly, I adore spongy pancakes studded with peanut butter and chocolate chips, as well as banana pancakes. However, due to the rush of early mornings, I find it hard to make the time to make the batter from scratch, and I often feel that the richness of pancakes imply that they are only for special occasions.
This pancake recipe, which only requires three ingredients, is easy to make, gluten-free, protein filled, sugar-free, and fiber friendly! Not only are the pancakes themselves utterly tasty, but they are accompanied with an irresistible, refined-sugar free four-ingredient chocolate peanut butter sauce. I hope you all enjoy them as much as I do!
INGREDIENTS (Yields about 4-5 medium/small pancakes, about one serving)
For the Pancakes:
- 1/2 Cup gluten-free oats
- 1 Medium-sized very ripe banana*
- 1/4 Cup of non-dairy milk, I use unsweetened almond milk
- 1 1/2 Tsp. flaxseed meal or chia seeds
Optional: 1 Tsp. vanilla extract
*Using a very ripe banana is crucial for this recipe. A ripe, preferably spotty banana is the natural sweetener in this recipe. If an unripe banana is used, the taste will not be the same.
For the Chocolate Peanut Butter Sauce:
3 1/2 Tbsp. almond milk
2 Tbsp. peanut butter
2 Tsp. cacao powder
1 Tsp. maple syrup
INSTRUCTIONS
- In a food processor or blender, blend all of the pancake ingredients until smooth.
- On the stove, heat a well-greased skillet until hot, and pour the batter into the pan in pancake-sized increments. At this point, you can add any additional toppings you like!
- Cook the pancakes on one side for about one to two minutes, then carefully flip them over, and cook for another one to two minutes. The pancakes are quite delicate, so be careful when flipping!
- Once all of the pancakes are cooked, create the chocolate peanut butter sauce by adding all of the ingredients together in a small bowl and thoroughly mixing them together until evenly combined.
- Serve immediately and enjoy with your favorite toppings! I personally love adding fresh berries on top.
