Peanut Butter Jelly Smoothie Bowl
Peanut butter and jelly sandwiches were the staple sandwich of my childhood. Crunchy bread with blackberry jelly and about half a container of Skippy's peanut butter was a good representation of a typical lunch I would have as I was growing up.
Now, smoothie bowls are a good representation of a typical "Alex" food. I decided to come up with a healthy peanut butter and jelly smoothie bowl recipe to satisfy my cravings during breakfast. The combination of berries mimic the taste of jelly, and the oats add a nice thickness as well as a bonus of extra protein. This smoothie bowl is full of protein, gluten-free, naturally sweetened, and tastes just like the delicious sandwich!
INGREDIENTS (Yields one smoothie bowl)
- 1 Heaping tbsp. unsweetened, palm-oil-free peanut butter
- 1 Frozen banana
- 1/2 Cup frozen wild blueberries
- 4-5 Raspberries
- 1/4 Cup gluten-free oats
- 1/3 Cup almond milk
Optional: A few fresh blackberries
INSTRUCTIONS
- Blend all ingredients together in a food processor or blender, and blend until smooth.
- Transfer to a bowl and top with you favorite toppings! Some of my favorites for this recipe are blackberries, cacao nibs, chia seeds, and dried mulberries.
