Tangy Lemon Poppyseed Smoothie Bowl

Most of the time, when I crave a dessert, I long for a chocolaty and decadent treat. However, on the slim occasion that I have a craving for a fruity-dessert, the desire so strong that it is all that I can think about! Last week, I could not stop thinking about the classic lemon and poppy-seed combination. There is something too lovely about the refreshing tang of lemon! As I have been experimenting with making various dessert-smoothie bowl flavors, I thought I would give this flavor-combination a try. The taste of this smoothie bowl was everything I could have wanted!

This smoothie bowl is tangy, refreshing, and incredibly creamy. Even though it is made with only vegetables, this bowl has a true lemon poppy-seed flavor. Not only is this smoothie packed with plant-based protein, but it is also full of complex carbs to keep you full until lunchtime! It is the perfect lemony treat for breakfast or dessert.

INGREDIENTS (Yields one smoothie bowl)

  • 1 Cup yellow squash, sliced and frozen*

  • 1/2 of a baked, peeled, and frozen Japanese sweet potato*

  • One serving of vanilla plant protein, I used one and a half scoops (3/4 of a serving) of Orgain protein*

  • 1 Tsp. poppy-seeds

  • 2-3 Tsp. lemon zest

  • 2 Tbsp. fresh lemon juice

  • A pinch of turmeric (for color)

  • Water or non-dairy milk to blend

    *If you do not have yellow squash you can substitute with zucchini (the color may differ, but not the taste).

    *Bake the Japanese sweet potato rather than steam it. Baking the Japanese sweet potato will make it extra sweet.

    *If you do not have or want to use protein powder, I recommend substituting the Japanese sweet potato for frozen banana. Without the vanilla protein, the smoothie will not be as sweet.

INSTRUCTIONS

  1. Blend all of the ingredients together in a food processor or blender and blend until smooth. Add in liquid of choice in small increments; use just enough to successfully blend the Japanese sweet potato and yellow squash. The thickness of the smoothie bowl will depend on the amount of liquid used.

  2. Transfer to a bowl, top with you favorite toppings, and enjoy! Some of my favorite toppings for this recipe are blueberries and buckwheat groats.
